Sticky Tomato Jam
Ready in 50 minutes | Serves 10
- 1 tablespoon Olive Oil
- 2 Spanish onions diced
- 1 Red capsicum, seeded & diced
- 12 Tomatoes, seeded squeezed out & roughly chopped
- Cracked pepper & salt crystals
- 1 cup Brown sugar
- 2 tablespoons Tomato paste
- 1/2 cup White vinegar
Fry off the onion in the olive oil, then add the remaining ingredients. Bring to the boil then reduce heat. Simmer for approx 30 mins or until the sauce is thickened, stirring occasionally.
Drizzle the halved figs with some honey & bake for 5 mins.
Bake the pieces of proscuitto until crisp 5-10 mins.
Place the figs on the brushcetta, then a spoonful of goats curd then finally the proscuitto.
